7 Autumnal Plant-Based Smoothies

I don’t know about you, but when it’s this hot out, I want no part of standing over the hot stove or turning up the oven making my kitchen even hotter than it already was. On hot days, I crave cool food. As a primarily plant-based family, we have always had to answer the question “So, what do you eat then (I’ll reference that another time)? Salads?”

Well, I mean, yes we do sometimes eat salads, but not every day. However, I can say with complete honesty, you will hear our Vitamix roaring every single morning. My husband is the real smoothie master. Although he and I like different types of smoothies. There really are so many.

You know me - I love Autumn all year. So, without further adieu, here are seven recipes for autumn-inspired plant-based smoothies.**

Pumpkin Pie Smoothie

- 1 cup unsweetened pumpkin puree

- 1 ripe banana

- 1 cup unsweetened almond milk

- 1 tablespoon maple syrup

- 1/2 teaspoon pumpkin pie spice

- 1/2 teaspoon vanilla extract

- Handful of ice cubes

Blend all the ingredients together until smooth. Sprinkle some cinnamon on top, if desired.

Apple Cinnamon Smoothie

- 1 medium apple, cored and chopped

- 1 ripe banana

- 1 cup unsweetened almond milk

- 1 tablespoon almond butter

- 1/2 teaspoon cinnamon

- 1/4 teaspoon nutmeg

- Handful of spinach

- Handful of ice cubes

Blend all the ingredients until well combined and creamy. Serve chilled.

Spiced Pear Smoothie

- 1 ripe pear, cored and chopped

- 1/2 cup unsweetened almond milk

- 1/2 cup plain dairy-free yogurt

- 1 tablespoon honey or maple syrup

- 1/2 teaspoon cinnamon

- 1/4 teaspoon ground ginger

- 1/4 teaspoon nutmeg

- Handful of ice cubes

- 1 cup unsweetened almond milk

- 1 orange, peeled and segmented

- 1 cup unsweetened coconut milk

- 1 tablespoon honey or maple syrup

- Handful of spinach

- Handful of ice cubes

Gingerbread Smoothie

- 1 ripe banana

- 1 tablespoon almond butter

- 1 cup unsweetened almond milk

- 1 tablespoon molasses

- 1/2 teaspoon ground ginger

- Handful of ice cubes

Fig and Date Smoothie

- 2 ripe figs

- 2 Medjool dates, pitted

- 1 cup unsweetened almond milk

- 1 tablespoon almond butter

- 1/2 teaspoon vanilla extract
