Delicious and Nutritious: No-Bake Pumpkin Spiced Healthy Snack Balls Recipe
I am constantly making some variation of these snack balls. The most basic variation contains just raw cashews, pitted dates, vanilla extract, and a dash of sea salt. Those are still great! The season and my mood is what determines anything extra that gets added in. We love making these because they are naturally sweet (dates are “natures candy” dontcha know?) which makes my kids happy. I don’t mind them sneaking into the fridge to help themselves throughout the day.
It's been raining on and off this week. Thankfully this has lowered the temps. The wind and gray skies definitely helps bring in the cozy, Autumn feels. So, this morning, when my nine-year-old asked if he could have some candy at 8:30am, I decided it was time to make a batch of these, only pumpkin spiced. For those of you who still need to be convinced - these babies are packed with plant protein, omega 3s, healthy fats, iron, magnesium, and antioxidants.

Ingredients:
1 cup raw cashews
1 cup dried, pitted dates
1 tbsp hemp seeds
1 tbsp pumpkin seeds
1 tps pumpkin pie spice
1 tsp vanilla extract
(up to 1 tbsp water if needed)
Dash of pink Himalayan salt
Optional: Cinnamon Sugar
Add first six ingredients to food processor. Process until mixture becomes “sticky”. If mixture appears to just crumble, gradually add up to a tablespoon of water until mixture gets sticky and rolls onto itself into a ball. Once this happens, turn off processor, unplug, and remove blade. Use 1” cookie baller or spoons to scoop out mixture and roll into 1” balls. At this point you can roll balls in cinnamon sugar or lightly sprinkle with sea salt to desired taste. (I LOVE salty-sweet.) Place balls onto cookie sheet lined with wax paper to prevent sticking.
Pop tray into fridge for about 10 minutes to firm up a bit before you enjoy the heck outta them. Get them while you can because they go QUICK in this house.
